Couscoussaki Me Tyri – Greek Mac and Cheese with Broccoli
This Greek variation on Mac & Cheese using a traditional peasant-style pasta is cheesy, creamy, savory, and loaded with vitamins thanks to the addition of delicious broccoli!
Serves 4
Ingredients
1 red onion
16 oz Loi Couscoussaki
extra virgin olive oil
4 quarts water, boiled
1½-2 tablespoons sea salt
2 cups whole milk
3 eggs, beaten
20 ounces shredded cheese (kasseri, cheddar or other melted cheese)
Salt, as needed
Freshly ground pepper, optional
3 cups cooked broccoli florets
Directions
Add onion to dry medium saucepan over medium heat, and saute.
Add couscoussaki to saucepan, and toast with onions, stirring occasionally, until pasta begins to smell nutty.
Add 3 tablespoons olive oil, stirring to combine.
Slowly add the boiling water, a little at a time to the saucepan with the pasta, stirring occasionally, to allow the pasta to cook and release the starches.
In a separate bowl, combine eggs and milk, and whisk to fully combine; add grated cheese and stir into to mix.
Once the pasta is partially cooked, add a spoonful of the hot pasta to the egg/milk/cheese bowl to temper to avoid eggs scrambling
Once tempered, add egg/milk/cheese to pot, stirring to fully combine and make a cheese sauce. Taste and season with salt (and pepper if desired).
Once sauce and pasta come together, add the broccoli florets, stir to combine and serve.
