Spastes Patates me Pelte - Smashed Potatoes with Tomato Paste

These flavorful potatoes are crispy, crunchy, and bright - the perfect side dish for any meal, or a meal unto themselves!

Serves 4

Ingredients

  • 3 lbs baby potatoes (red bliss or russet), boiled until fork tender (add garlic cloves and thyme to water when boiling, if desired)

  • ¼ cup Greek extra virgin olive oil

  • 2 tablespoons tomato paste

  • 2 lemons, juiced

  • ¾ cup water

  • 1 teaspoon tomato paste (Kyknos preferred)

  • salt and pepper to taste

  • Greek yogurt or Feta cheese, to garnish

Directions

  1. Preheat oven to 400ºF.

  2. On a sheet tray, place the boiled potatoes and ‘smash’ them with the palm of your hand to flatten and gently break.

  3. Drizzle the smashed potatoes with olive oil, and toss to fully coat.

  4. Add the tomato paste, and mix in to fully coat the potatoes.

  5. Add the lemon juice, and mix  in to fully coat the potatoes.

  6. Season with salt and pepper to taste, and mix to combine.

  7. Spread the potatoes on the sheet tray in a single layer, and bake for approximately 20 minutes, until golden and crispy.

  8. Serve with a dollop of Greek yogurt, and enjoy!
